Saint Laurentaise

The traditional cuvée of our cellars, I was born from a composition of three grapes (black grenache, carignan and syrah) picked by hand at the optimal maturiy. My rich and lasting taste unveils deep tannins with hints of overripe red fruit, of vanilla and spices.
I go well with game cooked in sauce or with fine cheeses.
I continue to mature for 4 to 5 years in bottle.

Grape Varieties: Carignan 50 %, Grenache 25 %, Syrah 25 %.
Soil : Clayey Limestone.
Fermentation : Method carbonic maceration, aged in barrels for 6 months.
Best Drunk within : 5 years.

Organoleptic characteristics
A deep sombre red. Marked by spices, pepper as well as a light note of vanilla. The short barrel-ageing confers a complexity on the wine, the tannins are silky and the finish oaky.
Serving temperature : 17°C
Gastronomic alliances : Game, red meat, Cassoulet.
